Toscanske Mamma’er vil sikkert rynke på næsen af min Toscanske brødsalat: Brødet skal nemlig slet ikke ristes, hvis det skal være den ægte vare. Men – det smager meget bedre, hvis brødet får lidt sprødhed som modvægt til de bløde tomater. Spis salaten til al slags kød – og i rigelige mængder når det er tomatsæson.

Du skal bruge
BRØDCROUTONER
½ daggammelt brød
2 spsk olivenolie
Flagesalt

DESUDEN
400 g tomater – gerne forskellige størrelser og farver
½ rødløg
1 håndfuld gode oliven
3 spsk olivenolie
1 spsk eddike (sherryvin- eller æbleeddike)
salt, peber
et nip sukker

Sådan gør du
BRØDCROUTONER
Brødet rives i mundrette stykker og kommes i et ildfast fad. Et par spsk olivenolie dryppes over og olien masseres godt ind i brødet. Brødet krydres med salt og sættes i ovnen. Det grilles til brødstykkerne har taget farve og er blevet sprøde på ydersiden – men stadig bløde i midten. Vend brødet godt rundt undervejs og hold øje med det. Tages ud og afkøles. Brødstykkerne kan laves nogle timer før servering.

DESUDEN
Tomaterne skæres i grove, uregelmæssige stykker og kommes i en skål. Rødløget halveres og skæres i tynde ringe, og kommes i tomaterne sammen med oliven. Der krydres med en smule salt (husk at brødet også er saltet), peber og en lille smule sukker og det hele vendes med olivenolie og eddike. Tomaterne vil nu smide en del af saften, hvilket er en vigtig del af processen: Dels kommer tomaterne til at smage af mere når de drænes let og dels dannes der en krydret tomatsaft-dressing som brødet vil suge til sig, når det bliver blandet i salaten.

10 minutter før spisetid vendes brødstykkerne i salaten. Bland det hele godt og sørg for at brødet bliver vædet med så meget af tomatdressingen som muligt.

Tips & Tricks
Timingen er vigtig i denne opskrift: Brødet må hverken få for lidt eller for meget i ovnen, og skal desuden tilsættes tomatblandingen på rette tidspunkt, ellers bliver det enten for blødt (og kommer til at minde lidt for meget om traditionel toscansk brødsalat) – eller når ikke at suge og blive opblødt af den dressing der ligger i bunden af tomatskålen. En god tommelfingerregel er, at blande brødsalaten lige inden du siger værsgo´:)
