Denne salat er en sommer-bebuder og skal absolut laves når de første nye kartofler kommer og aspargeserne endnu ikke er væk. Laks, kartofler, asparges og dild er en klassiker og det er der ikke noget at sige til – det smager pragtfuldt. Brug gode råvarer – det er det, der bærer salaten.

Du skal bruge
DRESSING
Et lille bundt dild
3 dl creme fraiche
1 tsk dijonsennep
1 tsk citronsaft
Salt, peber

SALAT
250 g grønne asparges
2 tsk olivenolie
En smule fint salt
3-4 mini romaine salathoveder
400 g nye, kogte kolde kartofler
500 g varmrøget laks af god kvalitet
2 spsk kapers (de almindelige i saltlage)

Sådan gør du
DRESSING
Hak dilden fint (tag evt et par kviste fra til pynt) og rør alle ingredienser til dressingen sammen. Smag til – det skal være en klassisk creme fraiche dressing med dild, ikke så meget pjat.

SALAT
Knæk enderne af aspargeserne, vend dem med lidt olivenolie og en smule fint salt, og grill dem eller steg dem på en pande ved god varme, til de er tilberedte men stadig faste. Skær dem i 5-6 cm lange stykker.

Skyl salaten, riv den i store stykker og fordel dem på et fad. Skær de kolde kartofler over på ‘maven’ og fordel dem på salaten. Fordel laksen i store grove stykker på salaten – kassér skindet. Fordel de grillede asparges ovenpå laksen. Dryp kapers af og drys dem over salaten.

Servér dressingen til salaten eller dryp noget af den på salaten og servér resten til.
