Jordbæris er ’jordbær med fløde’ i frossen tilstand – indbegrebet af dansk sommer. Isen her skal laves på ismaskine, men andetsteds kan du finde en opskrift på cremet is uden ismaskine.

Du skal bruge
300 g jordbær – friske eller frosne
1 spsk citronsaft
4 æggeblommer
150-180 g sukker
2 dl piskefløde
2 dl sødmælk

Sådan gør du
Jordbær (evt. halvt optøede hvis du bruger frosne bær) blendes til en ensartet puré. Smages til med citronsaft. Æggeblommer piskes lyse og luftige med rørsukkeret. Mælk og fløde vendes i æggemassen og jordbærpuréen vendes også i.

Massen køres på ismaskine. Kan holde sig en uges tid, men smager bedst indenfor et par døgn. Jeg plejer at lave isen om formiddagen og så fryse den til om aftenen, hvor vi som regel spiser det hele…

Tips & Tricks
Har du ikke en ismaskine, så lav en ’parfait’ i stedet. En parfait er en is der kan fryses uden maskine. Den indeholder mere fedt og sukker, fordi sukker og fedt afholder isen fra at danne store iskrystaller under indfrysning. Du kan se opskrifter på Parfait andetsteds.
