Helt enkelt; kartofler i grove stykker, bagt i ovnen med lidt olivenolie, en krydderurt og et drys salt – sprøde udenpå og smeltende møre indeni. Det er detaljerne der afgør, om en simpel kartoffel fra ovnen er kedelig eller så lækker at den kandiderer til snack. Dels skal kartoflerne bage længe nok – dels skal måden de er saltet på, være i orden: Det fine salt trænger ind i kartoflerne og giver dem smag under bagningen – flagesaltet giver den tydelige oplevelse af salt, når man spiser dem. Se herunder hvordan du laver ovnkartofler, der til hver en tid matcher kødet eller den lækre salat.

Du skal bruge
1 kg kartofler, skrubbet men gerne med skræl på
1 spsk olivenolie
1 tsk fint salt
8-10 stilke frisk, hakket timian eller rosmarin – eller 1 tsk af de tørrede

DESUDEN
Yderligere en tsk flagesalt (eller groft salt) lige før servering

Sådan gør du
Tænd ovnen på 200 grader. Vask kartoflerne og skrub dem hvis nødvendigt. De både smager bedst og holder bedst formen hvis skrællen bliver på. Skær dem i grove og uens stykker på 3-4 cm. Vend dem med olivenolie, fint salt og de hakkede krydderurter (friske eller tørre).

Kom bagepapir i en bradepande eller blot på en bageplade og fordel kartoflerne derpå – de skal kun ligge i et enkelt lag. Bag kartoflerne i ca. 45 minutter til de er helt møre, rod lidt rundt i dem undervejs.

Tag kartoflerne ud, drys med flagesalt / det grove salt, vend rundt og servér.
